Turnip pickle

Turnip pickles are a type of pickled vegetable made from turnips, which are a root vegetable with a white, purple, or red skin and a white or pale green interior. Turnip pickles are typically made by pickling thinly sliced or grated turnips in a mixture of vinegar, water, salt, and spices. The pickles can be served as a condiment or snack, and are often enjoyed in Middle Eastern and Asian cuisine.

To make turnip pickles, you will need the following ingredients:

  • Turnips: You can use either white or purple turnips for this recipe. Look for firm, unblemished turnips with smooth skin.
  • Vinegar: Use a white vinegar, such as rice vinegar or white wine vinegar, for a mild, clean flavor.
  • Water: This will help to dilute the vinegar and create the pickling liquid.
  • Salt: Use a fine-grained salt, such as kosher salt or pickling salt, for the best results.
  • Sugar: This will help to balance the acidity of the vinegar and add a touch of sweetness to the pickles.
  • Spices: You can add a variety of spices to your turnip pickles, such as mustard seeds, coriander seeds, peppercorns, bay leaves, and allspice berries.

To make the pickles, start by washing and thinly slicing or grating the turnips. In a small saucepan, combine the vinegar, water, salt, sugar, and spices and bring to a boil. Add the turnips to the pan and cook for 1-2 minutes, until they are just starting to soften. Remove the pan from the heat and let the turnips cool in the pickling liquid. Once they are cool, transfer the turnips and liquid to a jar or other airtight container and refrigerate for at least a few hours or overnight to allow the flavors to develop. The pickles will keep in the refrigerator for up to 2 weeks.
